Mommy tactics: zoodles and eggs

Probably one the healthiest meals at our house are zoodles (aka zucchini noodles) and eggs. The recipe itself is easy; however, there is a little work involved in making the zoodles. I make this recipe about twice a month.

There are a number of tools you can use to make the zoodles. We opted to purchase the brand fit cuisine. I wanted something compact. I actually haven’t used it for vegetables other than zucchini.

Once you have the zoodles ready, add two tablespoons of olive oil and spices of your choice (I use cumin, salt, and pepper). Cook the zoodles in the oven at 350 for about 30 minutes, making sure to spread the zoodles out and turn them over halfway. Serve with hard-boiled eggs and ground turkey.

Other recipes call for pasta sauce, pesto or parmesan cheese. You can be creative and change up the recipe every time.
